Resumen
La presente investigación tiene como objeto el desarrollo de una bebida refrescante, el cual aporte la capacidad antioxidante del café verde (Coffea arabica) y la gulupa (Passiflora edulis Sims), incluyendo sus características fisicoquímicas. Para ello, se evaluaron diferentes formulaciones de la bebida refrescante. La bebida se elaboró a partir de la mezcla de una infusión de café verde y pulpa de gulupa previamente caracterizadas, teniendo en cuenta que los niveles de cafeína no superaran lo recomendado por el INVIMA en el Acta 03/06 (250 mg / L). Las formulaciones evaluadas fueron: T1: 0% infusión de café verde, 100% agua (Patrón); T2: 100% infusión de café verde, 0% agua, T3: 50% infusión de café verde, 50% agua y T4: 75% infusión de café verde, 25% agua. Una vez desarrolladas las distintas mezclas, se realizaron pruebas fisicoquímicas correspondientes a pH, acidez, ° Brix, capacidad antioxidante por dos métodos (FRAP y DPPH) y se evaluó su aceptación sensorial, con un panel no entrenado. Como resultado se obtuvo que todos los tratamientos evaluados se encontraron en rangos de pH, acidez y ° Brix aceptables de acuerdo a la resolución 3929 del 2013 y cumplieron con el límite de consumo recomendado de cafeína. Además, el tratamiento con una mayor aceptación sensorial fue la T3. Esta última se caracterizó por un pH de 3,73 ± 0,0058, 10 ± 0,1 ° Brix, 0,23 ± 0,0038% acidez reportada en ácido cítrico, antioxidantes por DPPH de 0,059 ± 0,001 mg / L y por FRAP de 0,06 ± 0,004 mg / L y cafeína de 0,000052 mg / L, demostrando que es un producto adecuado para el mercado,

The present research aims at the development of a refreshing beverage, which contributes to the antioxidant capacity of green coffee (Coffea arabica) and purple passion fruit (Passiflora edulis Sims), including its physicochemical characteristics. To do this, different formulations of the refreshing drink were evaluated. The drink was made from the mixture of a green coffee infusion and purple passion fruit pulp previously characterized, taking into account that the caffeine levels did not exceed that recommended by INVIMA in Act 03/06 (250 mg/L). The formulations evaluated were: T1: 0% infusion of green coffee, 100% water (Pattern); T2: 100% infusion of green coffee, 0% water, T3: 50% infusion of green coffee, 50% water and T4: 75% infusion of green coffee, 25% water. Once the different mixtures were developed, they were subjected to physicochemical tests corresponding to pH, acidity, Brix, antioxidant capacity by two methods (FRAP and DPPH) and their sensory acceptance was evaluated, with an untrained panel. The result was that all the evaluated treatments were found in acceptable pH, acidity and Brix ranges according to resolution 3929 of 2013 and met the recommended caffeine intake limit. The treatment with greater sensory acceptance was T3. The latter was characterized by a pH de 3,73 ± 0,0058, 10 ± 0,1 °Brix, 0,23 ± 0,0038 % acidity reported in citric acid, antioxidants by DPPH of 0,059 ± 0,001 mg/ L and by FRAP of 0.06 ±0.004 mg/L and caffeine of 0,000052 mg/L, demonstrating that it is a suitable product for the market, which could be marketed generating new income for coffee producers and processors.
