Characterization of the Livestock and Horse Meat Marketing System Around a Slaughterhouse

Resumen

El objetivo de este trabajo fue caracterizar el sistema de comercialización de animales y carne equina en torno a una planta de beneficio mediante el análisis de variables cualitativas y cuantitativas relacionadas con la información general del propietario; la compra y las condiciones de transporte de animales destinados a sacrificio, y la venta y comercialización de la carne. Los resultados mostraron que los comercializadores ejercen su actividad de forma prioritaria y no pertenecen a agremiaciones. Los animales provienen de los departamentos de Casanare, Meta, Arauca, Sucre, Caldas y Valle del Cauca, y son adquiridos directamente en finca. Los parámetros de compra en orden de importancia son el peso, la condición corporal, el precio, el estado, la edad y el sexo. Las condiciones de transporte de los animales presentan deficiencias, lo que incrementa el porcentaje de animales caídos. Los animales sacrificados varían de 21 a 80 por semana, y los principales destinos son carne, industria transformadora, seguida por expendio de carne fresca. No existe un sistema de clasificación de canales ni estrategias de mercado. En conclusión, la cadena cárnica ha tenido un bajo desarrollo desde el punto de vista productivo y de agronegocio debido a factores relacionados con ausencia de sistemas de producción, bajo número de plantas de sacrificio especializadas, falta de conocimiento sobre las ventajas alimennutricionales de la carne, clandestinidad en el mercado y factores de índole cultural, lo cual ha imposibilitado su expansión hacia nuevos mercados.

Abstract

This study aims to characterize the livestock and horse meat marketing system around a slaughterhouse by analyzing qualitative and quantitative variables related to general information provided by the owner, the purchase and transport conditions of the animals for slaughter, and sale and meat marketing. The results showed that marketers carry on business as a priority and do not belong to guilds. The animals come from the departments of Casanare, Meta, Arauca, Sucre, Caldas and Valle del Cauca, and they are purchased directly from farms. Purchasing parameters, in order of importance, are: weight, body condition, price, status, age, and sex. Transport conditions of the animals are deficient, which increases the percentage of fallen animals. The number of sacrificed animals varies from 21 to 80 per week, and the main destinations are meat processing industry, followed by sale of fresh meat. There is no classification system for marketing channels and strategies. In conclusion, the meat chain has had a low development from the point of view of production and agribusiness, due to factors related to the lack of production systems, low number of specialized slaughterhouses, and lack of knowledge about the nutritional benefits of horse meat, secrecy in the market, and cultural factors, which has prevented its expansion into new markets.
