Resumen

Aunque la carne de cerdo es la de mayor consumo a nivel mundial, en Colombia ocupa el tercer lugar, después de la de pollo y la de res, esto debido en gran medida a que aún existen muchas producciones artesanales en este país, en las cuales no hay planes sanitarios, a los animales no se les brinda alimentación balanceada, las instalaciones no están de acuerdo con los requerimientos de los porcinos y lógicamente no cumplen con la normatividad que exige el estado para las unidades de explotación porcina. Este tipo de manejo inadecuado que aún se le sigue dando a los cerdos en el país le da muy mala imagen a la carne de cerdo, en muchas ocasiones ese tipo de manejo se da no necesariamente porque los productores estén empeñados en no darles el manejo adecuado a los cerdos, sino que existe desconocimiento de la caracterización de este tipo de producciones por parte de quienes podrían brindarles apoyo, para mejorar su manera de manejar los cerdos. Viendo esta problemática, conociendo que en el municipio de Quimbaya (Quindío) la mayoría de las producciones son pequeñas, partiendo de la experiencia que ha enseñado que generalmente las pequeñas producciones son las menos tecnificadas, teniendo entendido que aunque la producción porcina se practica en el municipio desde mucho tiempo atrás, pero que sin embargo, no hay estudios de caracterización de la misma, se decidió realizar un trabajo de tipificación de las producciones porcícola pequeñas y medianas de Quimbaya, con miras a tener una información clara y real que sirva como soporte para evaluar la viabilidad de las mismas a futuro. Se piensa que el reto cada vez es mayor, ya que tanto la normatividad que hace el Estado y los gustos del consumidor son y serán más exigentes que antes, debido a que hoy se busca un producto inocuo y de mejor calidad tanto nacional como a futuro en los mercados externos. Aunque puede sonar pretencioso la finalidad de la investigación, se cree que se puede desarrollar sin mayores dificultades, teniendo en cuenta que la metodología es sencilla pero eficaz: aplicación de encuestas y verificación de la información de las mismas en el campo.

By seeing this problematic, by knowing that in the municipality of Quimbaya most productions are small it, departing from the experience that has taught that generally the small productions are the technical less, understanding that although the pigs and hogs-linked production it practices in the municipality from a lot of some time ago, but that however, there is not studies of characterization of the same, decided carry out to him a work of characterization of the farms of pigs small and medians of Quimbaya, with a view to having a clear and real information it serves as support to evaluate the viability of the same thing to future. It thinks that the challenge each time is major, since so much the legislation that does the state and the tastes of the consumer are and will be more demanding than before, due to that today searches for to him an innocuous product, and high quality in national as to future in the external markets. Although can sound pretentious the end of the investigation, create to him that is to can develop without bigger difficulties, I keeping in mind that the methodology is simple but effective.
