Resumen

Actualmente el sector agrícola de pequeños productores colombianos se ve afectado por la baja retribución económica y el marcado carácter de individualidad que restringen una producción planificada que garantiza ingresos adecuados por la labor realizada. La presente propuesta nace de la necesidad de organizar los pequeños productores del área rural del municipio de Sesquilé, Cundinamarca; estos agricultores presentan dificultades a la hora de comercializar la producción agrícola lo que se ve reflejado en pérdidas económicas para ellos. Por tanto, se plantea formular un sistema colaborativo Food Hub entre pequeños productores del área rural para fortalecer y dar valor a la oferta de productos agrícolas. Mediante una caracterización de los pequeños productores agrícolas del área rural se busca conocer y analizar las características demográficas, productivas y económicas propias del sector. De esta manera, la información recolectada sirve como insumo para establecer la localización geográfica de un centro de acopio y operación que funciona bajo la filosofía Food Hub, este centro de acopio es un elemento de conexión entre los pequeños productores y el mercado, además, cumple con la normatividad del Plan de Ordenamiento Territorial del municipio y tiene en cuenta el impacto económico, social y ambiental que genera un centro de acopio en un área como Sesquilé. Finalmente, se plantea el funcionamiento del centro Food Hub integrado mediante una cadena de valor por tres procesos estratégicos, cinco misionales y dos de apoyo. Currently, the agricultural sector of small Colombian producers is affected by the low economic remuneration and the marked character of individuality that restricts a planned production that guarantees an adequate income for the work done. This proposal stems from the need to organize small producers in the rural area of the municipality of Sesquilé, Cundinamarca; These farmers have difficulties in marketing agricultural production, which is reflected in economic losses for them. Therefore, it is proposed to formulate a collaborative Food Hub system among small producers in the rural area to strengthen and give value to the supply of agricultural products. Through the characterization of the small agricultural producers in the rural area, the demographic, productive and economic characteristics of the sector are sought and analyzed. In this way, the information collected serves as an input to establish the geographic location of a collection and operation center that works under the Food Hub philosophy, this collection center is an element of connection between small producers and the market, besides, it meets with the regulations of the Territorial Planning Plan of the municipality and takes into account the economic, social and environmental impact generated by a collection center in an area like Sesquilé. Finally, the operation of the integrated Food Hub is proposed through a value chain through three strategic processes, five missionary, and two support processes. The mission processes are framed as the main functions of the Food Hub such as production, distribution, and marketing, quality control, purchasing, and R&D. Given that the structure and operation of the Food Hub are of an associative type, the strategic processes are aligned to the selected associative model, the Agrarian Transformation Society, obtained through the Analytic Hierarchy Process (AHP) method
