Resumen

En el presente documento se da a conocer el estudio realizado en el Centro Agropecuario de Buga, exactamente dentro de la planta de Lácteos ubicada en el complejo agroindustrial. En primer lugar, se determinó toda la parte diagnóstica para conocer la situación actual en la que se encontraban los diferentes factores que intervienen dentro de los procesos productivos, ya sea a nivel de personas o a nivel técnico industrial. Seguido de esto se realizó una documentación en donde se identificaron y analizaron las necesidades y expectativas de los grupos de interés para con esto poder determinar las características de calidad influyentes tanto en la parte del proceso de enseñanza como del proceso productivo. De manera complementaria se realizó todo el diseño y distribución en planta, esto con el fin de poder determinar la mejor ubicación de la maquinaria en sentido de mejorar las condiciones de aprendizaje actuales, es decir, para proporcionar una adecuada ubicación y asignación de materiales y herramientas que ayuden a facilitar el proceso de elaboración de los diferentes productos. Finalmente se construyó un manual de procedimientos en donde se da a conocer toda la información, formatos, procedimientos, entre otros que se debe tener en cuenta a la hora de trabajar dentro de la planta de lácteos, además de permitir la creación de mejores condiciones tanto para los aprendices como para los instructores durante el proceso de formación y de producción

In the present document there is announced the study realized in Buga's Agricultural Center, exactly inside the plant of Lacteal located in the agro industrial complex. First, the whole part decided it diagnoses to know the current situation in to that they were finding the different factors that intervene inside the productive processes, already be to persons' level or to technical industrial level. Followed by this a documentation was realized where there were identified and analyzed the needs and expectations of the groups of interest for by this to be able to determine the influential characteristics of quality so much in the part of the process of education as of the productive process. In a complementary way the whole design and distribution was realized in plant, this in order to be able to determine the best location of the machinery in sense of improving the current conditions of learning, that is to say, to provide a suitable location and assignment of materials and tools that help to facilitate the process of production of the different products. Finally, a manual of procedures was constructed where there are announced all the information, formats, procedures, between others that it is necessary to bear in mind at the moment of working inside the plant of lacteal, beside allowing the creation of better conditions both for the apprentices and for the instructors during the process of formation and of production
