Resumen

La logística de distribución de productos perecederos en Bogotá es un asunto de gran importancia para gobernantes, empresarios y comerciantes, pues los capitalinos diariamente demandan una gran cantidad de alimentos perecederos provenientes de varias partes del país, en esta actividad se deben invertir una gran cantidad de recursos y dinero para poder transportar estos alimentos desde centrales de abastos hacia tiendas, supermercados, y consumidores finales, lo cual significa que hay una carga en el tránsito vehicular en la ciudad, esto se traduce en mayores costos de transporte, mayor tiempo para entrega de pedidos y movimiento de productos perecederos. Para fines de este proyecto se encontró que entre los productos perecederos las frutas abarcan un amplio margen de consumo de los bogotanos, y entre las frutas la que más se consume es el banano. En Colombia el banano ha sido un producto de exportación y de consumo interno que ha beneficiado enormemente la economía del país, para el consumo interno se destaca el cultivo de banano Criollo, y para las exportaciones el cultivo de banano tipo Cavendish, el cual se cosecha en su mayor parte en las regiones del Golfo de Urabá y en la parte nororiental del departamento del Magdalena. Por su parte el banano Criollo se cosecha en Antioquia, Tolima y en el Valle del Cauca. Según informes de indicadores del Ministerio de Agricultura la región de Urabá posee aproximadamente un área cultivada de 34.267 hectáreas, a este lo sigue el departamento del Magdalena con aproximadamente 11.426 hectáreas de cultivo, y por último el departamento de Guajira con un total de 1.714 hectáreas. La creación de empleos en Colombia gracias a la producción de banano es importante y sigue en aumento, según el Ministerio de Agricultura y Desarrollo Rural hay una generación de 30.000 empleos directos y 90.000 empleos indirectos aproximadamente. Cabe adicionar que el banano es la fruta más consumida en el mundo. Este trabajo tiene como objetivo proponer un modelo logístico para productos perecederos bajo el enfoque de “Última Milla”; que permita la identificación de posibles rutas de distribución al menor costo empleando un modelo matemático VRP teniendo en cuenta factores como la cantidad de vehículos, los tipos de vehículos, la capacidad de cada tipo de vehículo, las distancias entre las tiendas, la distancia entre la central de abastos y las tiendas, las demandas de las tiendas y los costos de transporte y operación en el último trayecto de la cadena de distribución “Última Milla”, desde la central de Abastos de Bogotá hacia parte del área urbana de Bogotá, específicamente la localidad de Fontibón. El último trayecto que realiza un pedido antes de llegar al consumidor o a un intermediario, se conoce como el problema de “Última Milla”, para este caso específico, por medio de una dispersión de nodos situados en el área urbana de Bogotá se debe abastecer el banano de manera eficiente a los minoristas, las restricciones o factores mencionadas anteriormente, representan costos para las empresas y organizaciones, las cuales necesitan eficiencia en sus entregas permitiendo maximizar ganancias, disminuyendo tiempos en el transporte y así mismo reduciendo la ocupación del espacio público. Se hace necesaria la modelación matemática para representar la red de distribución de la central de Abastos de Bogotá siendo este el centro de acopio de alimentos más grande del país

The logistics of distribution of perishable products in Bogota is a matter of great importance for governors, businessmen and merchants, since the capitalists daily demand a large quantity of perishable foods coming from other parts of the country, in this activity they must invest a large amount of resources and money to transport these foods from supply centers to stores, supermarkets, and final consumers, which means that there is a burden on vehicular traffic in the city, this translates into higher transportation costs, more time for delivery of orders and movement of perishable products. For the purposes of this project, it was found that among perishable products, fruits cover a wide margin of consumption for the people of Bogotá, and among the fruits, the most consumed is bananas. In Colombia, banana has been a product of export and domestic consumption that has greatly benefited the country's economy, for domestic consumption stands out the cultivation of Criollo banana, and for exports the cultivation of banana type Cavendish, which is harvested for the most part in the regions of the Gulf of Urabá and in the northeastern part of the Magdalena department. For its part, the Criollo banana is harvested in Antioquia, Tolima and Valle del Cauca. According to indicator reports from the Ministry of Agriculture, the Uraba region has approximately a cultivated area of 34,267 hectares, followed by the department of Magdalena with approximately 11,426 hectares of cultivation, and finally the department of Guajira with a total of 1,714 hectares. The purpose of this work is to propose a logistic model for perishable products under the "Last Mile" approach; that allows the identification of possible distribution routes at the lowest cost using a mathematical model VRP taking into account factors such as the number of vehicles, the types of vehicles, the average speed of these vehicles, the capacity of each type of vehicle, the hours of work, the distances between the stores, the distance between the supply center and the stores, the demands of the stores and the transport and operation costs in the last section of the "Last Mile" distribution chain, from Bogota supply center to part of the urban area of Bogotá, specifically the town of Fontibón. The last route that makes an order before reaching the consumer or an intermediary, is known as the "Last Mile" problem, for this specific case, by means of a dispersion of nodes located in the urban area of Bogotá, the Bananas efficiently to retailers, the restrictions or factors mentioned above, represent costs for companies and organizations, which need efficiency in their deliveries allowing maximizing profits, reducing transport times and also reducing the occupation of public space. Mathematical modeling is necessary to represent the distribution network of the Bogota supply center, being this the largest food collection center in the country
