El proceso de valoración de empresas conlleva al uso de distintas y variadas herramientas que permiten conocer la situación financiera actual de una empresa, con el fin de realizar el debido análisis y su comportamiento. Las grandes y pequeñas empresas buscan tener un análisis eficiente y efectivo para diseñar estrategias que los impulsen a ser novedosos, únicos y de alta calidad, es por esto que, estas herramientas son necesarias dentro de las organizaciones y muchas veces dependen del adecuado y correcto manejo que se les den, unas áreas dependiendo de otras. Es por esto que la realización del análisis del restaurante permite ver cómo está su interior y a la vez valorarlo y observar estrategias de mejoramiento a futuro. Por lo tanto, se formula la siguiente hipótesis en busca de una respuesta aplicable a este tipo de organizaciones: ¿Cuál es la situación financiera del restaurante VIANCCO? La pregunta anterior se desarrollará en este trabajo de investigación el cual estará soportado con información financiera del restaurante y del sector, e igualmente se realizará un análisis financiero, se evaluarán los indicadores, se interpretarán los estados financieros y se calculará el EVA, el costo de capital WACC, el ROE y el ROA. Estos indicadores y diferentes análisis realizados durante este trabajo de investigación, demostrarán si las propuestas implementadas por los diferentes autores son aplicables a un restaurante.
The process of firm appraisal includes the use of different and several tools that allow knowing the current financial situation of a firm in order to do a suitable analysis and evaluate its behavior. Firms look forward to doing an efficient and effective analysis to look for strategies that drive them to be innovative, unique and of a high quality, therefore these tools are necessary inside organizations and many times they depend on the appropriate and correct management given, one area depending on others. This way, an analysis to a restaurant allows seeing inside and appraising it to look at the future and determine a way to improve it. Therefore, it is stated the following hypothesis looking for an appropriate answer for this type of firms: What is the financial situation of the restaurant VIANCCO? The previous question will be answered in this investigation project which will be supported by financial information from the restaurant and its sector, likewise it will be done a financial analysis, an evaluation of indicators, an interpretation of financial data and the calculation of EVA, capital cost (WACC), ROE and ROA. This indicators and different analysis made throughout this investigation project will show up the relations between the financial theories and a real situation of a restaurant.
