El sacha inchi (Plukenetia volubilis L.), también conocido como maní estrella o maní de monte es una planta amazónica que se encuentra en países como Perú, Bolivia, Brasil y Colombia, contiene frutos en forma estrellada, con alrededor del 48-50% de aceite, compuesto por ácidos grasos poliinsaturados y compuestos fenólicos conocidos por su poder antioxidante; de la extracción de este aceite, se obtiene como subproducto una “torta” la cual presenta un alto contenido de proteínas y grasas que no son aprovechadas adecuadamente y que podrían ser de utilidad para la industria alimentaria aportando a la cadena de valor del sacha inchi. Igualmente, existen otros aceites vegetales con grandes propiedades nutricionales como el aceite de palma alto oleico, que cuenta con un gran potencial para su uso en productos y matrices alimentarias.
