Resumen

El transporte de ganado es un factor importante que puede influir sobre el bienestar de los animales y calidad de la carne. El estudio evalúa el manejo inadecuado de los bovinos en etapas previas al sacrificio y las lesiones que se generan en la canal. La investigación se realizo en la ciudad de Bogotá, en el Frigorífico San Martin de Porres Ltda, con una población de 3075 animales bovino machos y hembras de diferentes regiones de Colombia. Se identifico el manejo previo al sacrificio donde se observaron las condiciones de los animales al llegar al frigorífico, en los corrales y su relación con las lesiones en las canales. Registrando estas, mediante un formato de observación determinando la zona de la lesión y su profundidad cuantificando las lesiones, teniendo en cuenta los números de hierros que se asignaba a cada lote de animales de los camiones encuestados para poder llevar un seguimiento de los animales Los resultados se analizaron mediante estadística descriptiva, con determinación de porcentajes, tablas de contingencia y Chi cuadrado. Se obtuvo como resultados 642 lesiones, de las cuales 422 de ellas eran de animales que procedentes del Casanare lo que indica que a mayor distancia mayor numero de lesiones; el 42,3% de traumatismo en la zona correspondiente al cuarto trasero del animal, de éstas, el 15,2% constituyeron lesiones profundas. Respecto a las lesiones en el cuarto trasero, estas revisten particular importancia porque es donde que se encuentran los cortes de alto valor comercial. Se plantea que existe una directa relación entre el método de manejo de los animales antes de la faena, las características del transporte y la presencia de lesiones en la canales.

Cattle's transportation is an important factor that can act on the well-being of animals and quality of meat.
