Resumen
La identidad cultural establece rasgos característicos los cuales llevan a la acción de reconocer las costumbres sociales. Por ende, se debe tener en cuenta que el patrimonio hereditario y cultural va más allá de las tradiciones porque en el transcurso del tiempo la sociedad pueda no sentirse identificado atribuido a la inclusión de nuevas culturas, para este caso las gastronómicas. Así que, con la presente investigación se proyecta formular e implementar lineamientos para la salvaguarda del patrimonio cultural inmaterial representado por la gastronomía autóctona de Bogotá para llevar a cabo una posible conservación de la memoria gastronómica y la relación afectiva hacia los elementos inmateriales representativos de la identidad cultural bogotana. En el desarrollo de esta investigación se trabajaron las categorías de patrimonio cultural, patrimonio inmaterial, gastronomía, bienes culturales bajo un enfoque mixto con un tipo de investigación descriptiva documental teniendo en cuenta la técnica de análisis documental a través de matrices analíticas

Cultural identity establishes characteristic features which carry the action of recognizing social customs. Therefore, it should be taken into account that hereditary and cultural heritage goes beyond traditions because in the course of time society may not feel identified with the traditions due and attributed to the inclusion of new cultures, in this case the gastronomic ones. So with the present investigation, it is planned to formulate and implement guidelines for the safeguarding of the intangible cultural heritage represented by the indigenous cuisine of Bogotá to carry out a possible conservation of gastronomic memory and the affective relationship towards the immaterial elements representative of cultural identity Bogota. In the development of this research, the categories of cultural heritage, intangible heritage, gastronomy, cultural assets will be worked under a mixed approach with a type of descriptive documentary research taking into account the technique of documentary analysis through analytical matrices
