Resumen
La presente investigación se llevó a cabo durante el segundo ciclo de 2017 en el frigorífico de Chiquinquirá, con el objetivo de determinar el efecto de las condiciones antemortem, tales como tiempo de recorrido y de ayuno sobre las variables productivas como rendimiento en canal, para lo cual se consideró revisar las guías de movilización para determinar las distancias recorridas, al igual con los conductores se indago el tiempo demorado en el recorrido; para determinar el rendimiento en canal se aplica peso vivo/peso en canal por 100. Los resultados llevan a concluir que los tiempos de recorrido en el transporte de los animales y el excesivo ayuno son causantes de contusiones, pérdidas de peso vivo, bajos rendimientos en canal.

This research was conducted during the second cycle of 2017 in the refrigerator of Chiquinquirá, in order to determine the effect of the conditions antemorten, such as time travel and fast on the productive variables as carcass yield, for which it was considered review mobilization guides to determine the distance traveled, as well as asked with wires the time delay in the journey; to determine the carcass yield is the weight used live and carcase weight. The main results lead to conclude that the times in the transport of animals generate stress and bruises that represent losses in body weight and negative effects on the quality of the channel. Similarly, fast times also influence the performance of the channel which decreases to the extent that increases the waiting time.
