Resumen
El presente trabajo se grado, tuvo como propósito analizar la estructura y el funcionamiento de la cadena láctea. Para dar cumplimiento a este objetivo, se planteó una investigación cualitativa con un diseño analítico, utilizando la recolección de información de fuentes secundarias. Para este análisis nuestro campo de investigación se enfocó en la recolección de datos en tres factores, las relaciones con la economía nacional e internacional, en donde se consideró la información económica y social de la cadena láctea, su interacción con las instituciones públicas y privadas y el marco de políticas que coinciden en su desenvolvimiento. La estructura de la cadena productiva láctea, el cual nos permitió identificar la caracterización técnica y económica de los actores que intervienen dentro de la cadena y dentro de sus actividades básicas y de apoyo que constituyen la estructura dinámica de la cadena. Finalmente nos enfocamos en el funcionamiento productivo de la cadena láctea el cual comprende en la identificación y caracterización de las relaciones técnicas y económicas que se dan entre los distintos actores involucrados. Como resultado se realizó la construcción analítica de la matriz DOFA en la que se expresan las debilidades, oportunidades, fortalezas y amenazas, que se identificaron dentro de la estructura y el funcionamiento de la cadena láctea

The present work degree, it had as intention analyze the structure and the functioning of the lacteal chain. To give fulfillment to this aim, a qualitative investigation appeared with an analytical design, using the compilation of information of secondary sources. For this analysis our field of investigation focused in the compilation of information in three factors, the relations with the national and international economy, where it was considered to be the economic and social information of the lacteal chain, his interaction with the public and private institutions and the frame of policies that coincide with his development. The structure of the productive lacteal chain, which allowed us to identify the technical and economic characterization of the actors who intervene inside the chain and inside his basic activities and support that constitute the dynamic structure of the chain. Finally we focus in the productive functioning of the lacteal chain which understands in the identification and characterization of the technical and economic relations that are given between the different involved actors. Since result realized the analytical construction of the counterfoil DOFA in which express the weaknesses, opportunities, strengths and threats that they identified inside the structure and the functioning of the lacteal chain
