In the present investigation are exposed the difficulties that Colombian coffee growers face when carrying out export operations, which are mainly represented by the inherent volatility of exchange rates. This has an impact on the income that coffee growers receive, given that they must readjust their production constantly in order to respond to exchange rate fluctuations. That is why, we seek to propose and establish a hedging strategy that can reduce the exchange risk to which coffee growers are exposed. To carry out this purpose, the TRM is simulated in order to estimate its average, the 5% and 95% percentiles, from the results the financial derivatives (forwards, Futures and Options) are valued, the respective letters are calculated and the coverage strategies (delta neutral and delta-gamma neutral) are determined. The conclusion is that the best strategy is to use the forwards contracts, because although it allows the portfolio value to not change when the exchange rate changes, like the other derivatives. The forwards when trading in a non-standardized market, both the buyer as the seller can establish their own clauses and amounts of coverage according to the needs of each of the parties, thus offering exchange stability to coffee growers and therefore to the coffee sector over time
