Resumen
La investigación Las Prácticas de Cocina como Expresiones de la Cultura e Identidad Casanareña se enmarcó en la línea de investigación Educación, Lenguaje y Comunicación y el macroproyecto Expresiones Culturales e Identidad Regional. Tuvo como objetivo general caracterizar las prácticas de cocina, mediante la identificación y descripción de unos platos tradicionales y la relación de éstos con un saber culinario. Se desarrolló en el marco de un enfoque cualitativo de carácter descriptivo. Se aplicaron las técnicas de entrevista en profundidad y materiales documentales; la primera, direccionada por un guión, para escuchar y recoger el saber culinario de abuelas, madres, y cocineros autóctonos; la segunda, mediante una matriz de análisis documental para contrastar la información recolectada. Se acudió al análisis de contenido mediante el método “Destilar Información” (Vásquez, 2013). Los resultados obtenidos están relacionados con los cuatro platos más representativos del departamento del Casanare, que hacen parte del patrimonio intangible y son fundamentales en la construcción de lazos de identidad y como una pieza fundamental de la economía en el contexto de la cultura regional.

The investigation “Cooking Practices as Expressions of Casanareña Culture and Identity” was part of the line of investigation Education, Language and Communication and of the macroproject Cultural Expressions and Regional Identity. It had as general objective to characterize Cooking Practices, through the identification and description of some traditional dishes and the relationship of these with a culinary knowledge. It was developed in the framework of a qualitative approach, of descriptive kind. We applied techniques as in-depth interview and documentary materials; the first one, directed by a script, by listening and collecting the culinary knowledge of grandmothers, mothers, and native cooks; the second one by a documentary analysis matrix to confirm the gathered information. It was applied the content analysis by the method "Filtering Information" (Vásquez, 2013). The results are related with the traditional dishes of the department of Casanare which are part of the intangible heritage of the region, by building bonds of identity and as a master piece of the local economy, which in turn, they can contribute to regional culture.
