Abstract

The composition of fatty acids in liver and semitendinous and longissimus muscle tissue in both cattle and buffalo were compared. The fat was extracted from liophilized tissue samples and the extracted fatty acids were then methyl esterified and analyzed by gas chromatography. Buffalo liver had greater (P<0.05) levels of linoleic (C18:1, n-9), α-linolenic (C18:3, n-3) and eicosapentaenoic (C20:5, n-3) acids but lower (P<0.05) levels of docosahexaenoic (22:6, n-3) acid and saturated fatty acids. The total percentage of omega-3 fatty acids was very high in both buffalo and cattle liver with 13.4 and 11.8%, respectively. The cattle longissimus dorsi muscle had a higher (P<0.05) percentage of palmitic acid, linoleic acid, monounsaturated fatty acids (MUFAs) (P<0.05), polyunsaturated farry acids (PUFAs) (P<0.01), n-6 and n-3 fatty acids (P<0.001). The buffalo semitendinosus muscle had a higher n-6 and n-3 fatty acid content (p<0.05). Both cattle and buffalo tissues had a low n-6:n-3 fatty acid ratio, 0.11 - 2.4, a trait that is very desirable in terms of the adequate balance of these fatty acids in the human diet.
