Resumen
Se evaluó en el sacrificio el rayado del pollo y se determino las causas en el proceso de engorde. El rayado se divide en cuatro tipos: siendo el tipo 1 el mas leve y el 4 el mas profundo. El estudio se realizo en la planta de sacrificio y en cinco granjas pertenecientes a la empresa POLLO FIESTA S.A. la recolección de datos se realizo a los días 22, 29, 36 y al sacrificio. En las granjas se tomo el 5% de la población por sexo de cada uno de los galpones, en planta de sacrificio se reviso el 5% de cada uno de los viajes de las respectivas granjas. Las variables estudiadas fueron: edad, sexo, clima, raza, consumo, peso, Kg/m2 y densidad. Para el análisis de los datos se utilizo la estadística descriptiva. Se determino que el sexo y la raza de las aves no tienen ninguna incidencia en el numero de aves rayadas, los pollos en clima frío tienden a rayarse mas que en clima caliente. A medida que la edad en las aves avanza el rayado en el pollo se incrementa. El peso, Kg/m2 y densidad son variables que se encuentran muy relacionadas entre si influyen en el numero de aves rayadas ya que se encuentran muy juntas generando la condición perfecta para que las aves se rayen. En granja el tipo de rayado que mas se presento fue el tipo 1 seguido por el tipo 2,3 y 4. en planta de sacrificio se incremento el rayado tipo 2 seguido del tipo 3, 1 y 4, esto se debe al estrés a que son sometidas las aves al momento del cargue.

Thes work evaluated the sacriface of the chicken`s scratch and determined the causes in the process of fattening. The scatched is divided in four types: the type 1 is the most light and the number four is the deepest. The study was made in the sacriface storey and in five farms belonging to the enterprise POLLO FIESTA S.A. The gathering of data was done in the days 22, 29 and 36 and the day of sacrifice. In the farms was taken the 5% of the population per sex from each one of the large sheds, in the sacrifice storey was checked the 5% of each one load of chickens from each farm. The variables studied were: age, sex, weather, race, consumption, weight, Kg/m2 and density. For the analysis of data was utilized the descriptive statistic. Also was determined that the sex and race of the birds don`t have any incidence in the number of the scatch birds. The chickens in cold weather have the tendency to scrathc more than in hot weather. Whereas the birds`s age advance the chicken`s scratched increase the weight, Kg/m2 and density, variables which are very related betweem them. It has influence with the number of scratch birds as they are very join generating the perfect condition for scratching themselves. In the farm the type number 1 was the most presented, followed by the types 2,3,4. in the sacriface storey was incremented the scratched number 2 followed by types 3,1 and 4, this is due to the stress that are submited the birds at the moment of being loaded.
