Resumen

Los aceites de pescado se han utilizado como fuentes de ácidos grasos omega 3 en la inclusión de huevos, pero pueden ejercer una influencia negativa en sus propiedades sensoriales. Por otra parte, el aceite esencial de orégano (AEO) se ha demostrado que posee actividad antioxidante. Así, el objetivo de este estudio fue evaluar los efectos de la relación Carvacrol/Timol de los AEO, sobre el comportamiento productivo de gallinas ponedoras y las propiedades sensoriales de los huevos. Ciento sesenta gallinas marrones fueron distribuidas al azar en ocho tratamientos en un arreglo factorial de 4 x 2. Los factores incluidos fueron, fuente de grasa (aceite de pescado (APES) o aceite de palma (APAL)) y relación Carvacrol/Timol, suplementada con 200 ppm de AEO; Alto Carvacrol (AC), Alto Timol (AT), proporción de 1:1 Carvacrol/Timol (CT) y control (C) sin suplementación de AEO. Las gallinas fueron alojadas en 80 jaulas convencionales (2 por jaula) y el estudio se realizó durante un período de 16 semanas. Los huevos fueron recolectados, numerados y pesados todos los días. La evaluación sensorial se realizó con 40 catadores. El grupo AC mejoró significativamente (p<0,05) la conversión por masa de huevo (0,05gr), comparado con los demás grupos y presentó una tendencia (p<0,1) en mejorar la producción de huevo (2,14%) y la conversión por docena de huevo (-0.04gr). Por otro lado AT mejoro significativamente (p<0,05) el peso del huevo (2,03gr). Los huevos de las gallinas del grupo AC presentaron mayor altura de albúmina cuando la dieta contenía APAL. En contraste cuando la dieta contenía APES, el grupo AT mostró mejores resultados en este parámetro. Las unidades Haugh fueron mas altas cuando se incluyó en la dieta APES y AT o AC (82,8 y 76,6 unidades Haugh respectivamente), pero si el aceite que contenía la dieta era APAL, los grupos que presentaron mayores unidades Haugh fueron el grupo C y el grupo CT (78,9 y 84,9 unidades Haugh respectivamente). El grupo AT mejoro significativamente (P<0,05) la percepción del gusto de huevo, al incluir en la dieta APES (45.5%), pero AC mejoró la percepción cuando se incluyó APAL (57%). Se puede concluir que los AEO se pueden utilizar como promotor de rendimiento y la relación alta en Timol como producto para obtener efectos positivos en el sabor, cuando se añade APES a la dieta, en busca de obtener huevos omega-3.

Fish oils have been used as sources of omega 3 fatty acids on the inclusion of eggs, but can exert a negative influence on its sensory properties. Moreover, the essential oil of oregano (AEO) has been shown to possess antioxidant activity. Thus, the purpose of this study was to assess the effects of the relationship Carvacrol / thymol of AEO, on the productive performance of laying hens and sensory properties of eggs. One hundred sixty brown hens were randomly divided into eight treatments in a factorial arrangement of 4 x 2. The factors included were a source of fat (fish oil (FO) or palm oil (PO)) and related Carvacrol / thymol, supplemented with 200 ppm of AEO; High Carvacrol (HC), High thymol (HT), proportion of 1:1 Carvacrol / thymol (CT) and control (C) without supplementation of AEO. The chickens were housed in 80 conventional cages (two per cage) and the study was conducted over a period of 16 weeks. The eggs were collected, numbered and weighed every day. Sensory evaluation was conducted with 40 tasters. The HC group significantly improved (p <0.05) conversion by egg mass (0.05 g), compared with other groups and showed a trend (p <0.1) to improve egg production (2.14 %) and the conversion per dozen eggs (-0.04gr). On the other hand HT significantly improved (p <0.05) egg weight (2.03 g). The eggs from the hens in the HC group had a higher level of albumin when the diet containing PO. In contrast when the diet containing FO, HT group showed better results in this parameter. Haugh units were higher when introduced into the diet FOR and HT or HC (Haugh units 82.8 and 76.6 respectively), but if the oil containing diet was PO, groups that had higher Haugh units were group C and group CT (Haugh units 78.9 and 84.9 respectively). The HT group significantly improved (P <0.05) taste perception egg diet by including in the FO (45.5%), but HC improved perception when including PO (57%). We conclude that the SOA can be used as a promoter of performance and the relationship as a product high in thymol for positive effects on the taste, when added to the diet FO, looking to get omega-3 eggs.
