Resumen

El presente trabajo se realizó con la finalidad de determinar el efecto de la adición de aceite de aguacate como sustituto de grasa en una salchicha tipo Frankfurt, las razones de este proyecto fueron, determinar si la emulsión generada, puede hacer parte de una formulación en la salchicha tipo Frankfurt además observar el grado de aceptación del producto. Como primera medida se extrajo el aceite de aguacate Hass (Persea americana), se realizó una caracterización del aceite de aguacate tal como, determinación de densidad, índice de acidez e índice de yodo. Se elaboró una salchicha tipo Frankfurt reemplazando el contenido de grasa animal de la fórmula original por aceite de aguacate, según las siguientes concentraciones: (T0 0%; T1 25%; T2 50%; T3 100%) para cada formulación se realizaron pruebas fisicoquímicas tales como: textura, color y pH, acompañadas con respectivos ANOVA, posteriormente se sometieron las muestras T0 0% y T3 100% a análisis sensorial. Luego de analizar el aceite de aguacate se obtuvo una densidad 0,896 g/ml, mediante la prueba de acidez (NTC 218, 1999) se obtuvo un índice de acidez de 1,22% .En base a ácido oleico, la prueba (NTC 283, 1998) determinó un índice de yodo de 82.86 mg. Cgl2/g. En la elaboración de la salchicha tipo Frankfurt en las formulaciones T0 y T3 obtuvieron resultados de textura de 7,2N y 4,5N respectivamente, con diferencias significativas entre tratamientos, se entiende que T0 tiene una fuerza mayor de corte sobre T3. Se obtuvo en el refractómetro un pH promedio de 5,8 además se encuentra establecido por la NTC, 1325 de productos cárnicos, respecto al color se encontró diferencias significativas debido a los pigmentos y la clorofila presente en el aguacate. A nivel sensorial, en una escala hedónica de 5 puntos, se determinó que la formulación con mayor grado de aceptación fue la de T3, ya que esta se constituyó al 100% sustituida de aceite de aguacate Hass. Se concluyó que los resultados de la caracterización del aceite de aguacate Hass, son ídem a la teoría estudiada, se evidenció que el T0, 0% de sustitución presentó una mayor resistencia al corte y mejor color, respecto al tratamiento T3, con 100% de sustitución de aceite.
