Resumen

El avestruz (Struthio Camelus) a demostrado a lo largo de la historia ser una especie muy útil para el hombre, quien comenzó aprovechando sus plumas, para vestir a la nobleza de la época. Luego surgió la inquietud por aprovechar su carne, la cual resultó ser de excelente calidad (menor grasa, mayor aporte nutricional). Finalmente se le dio uso a las pieles obtenidas durante el sacrificio de los animales; dicha piel superó en calidad (textura, resistencia, durabilidad) a las pieles usadas convencionalmente en la industria marroquinera. Como consecuencia de este proceso, los diferentes criadores de esta especie fueron seleccionando, por producción y docilidad, los mejores ejemplares, dando como resultado la obtención de la variedad comercial African Black, la cual, según este trabajo de grado, es la especie llamada a ser la nueva alternativa en el desarrollo del sector pecuario nacional. Esta magnifica especie, gracias a su gran rusticidad y fácil adaptación al medio, permitirá, en corto tiempo, el desarrollo a gran escala de la industria ratícola nacional. Lo anterior es realizable en la medida que se cuente con una guía de manejo, especialmente adaptada a nuestro medio, objetivo que persigue y consigue el presente documento de investigación.

The ostrich (Struthio Camelus) to demonstrated throughout history to be a very useful species for the human race, who began taking advantage of his pens, to dress the nobility of the time. Soon the restlessness arose to take advantage of its meat, which turned out to be from excellent quality (smaller fat, greater nutricional contribution). Finally use the skins obtained during the sacrifice of the animals; this skin surpassed in quality (texture, resistance, durability) to the skins used conventionally in the leather industry. As a result of this process, the different breeders from this species were selecting, by production and docility, the best units, giving like result the obtaining of the commercial variety African Black, which, according to this work of degree, is the species called to being the new alternative in the development of the national cattle sector. This magnifies species, thanks to its great rusticity and easy adaptation to means, will allow, in short time, the development on great scale of the national “ratícola” industry. The previous thing is attainable in the measurement that is had a handling guide, specially adapted to our environment, objective that this investigation document persecutes and obtains.
